In this tasty summer dish, chicken thighs are roasted with zucchini then topped with a salsa made of charred green onion, fresh lime juice and cilantro. It can be served with rice, this week's Mexican Slaw, or on its own.
- 1 serving includes 2 chicken thighs; 2oz salsa; packaged in glass.

- Ingredients: Smart chicken, zucchini OL, lime juice, jalapeno OL, green onion OL, cilantro, brown sugar, olive oil, s&p.
- To serve: Warm chicken and zucchini in the oven at 350. Broil to crisp the skin. Top with included salsa. Serve with rice, veggies or a green salad.
