    Mexi-Kale Chopped Salad with Lime-Avocado Dressing and Pepitas

    This Kale Salad is full of locally grown veggies, black beans, sweet corn and sweet cherry tomatoes. It is topped with a delicious dressing and toasted pumpkin seeds. This salad is a meal on its own or can be split into 3-4 side salads.  
    • 1 quart salad includes 1/3 cup dressing and 2 Tbs pepitas; packaged in glass.
    • GF, DF, SF
    • Salad Ingredients: Baby Kale OL, bell pepper O, black beans O, red onion O, yellow corn O, green onion OL & cherry tomatoes OL.
    • Dressing Ingredients: Avocado, fresh-squeezed lime juice, extra virgin olive oil O, cilantro O, honey L, garlic, vinegar, s&p.
    • To serve: Place veggies into serving dish, add dressing, top with pumpkin seeds and enjoy! 
    • Enjoy within 5 days.
