Coffee Roasted Butternut Squash Soup

Butternut squash is roasted in ground coffee beans, cooked with veggies and sage, then blended for a smooth and delicious meal.  This flavorful 1 quart of soup feeds 2-4. 
  • 1 quart soup
  • GF, DF, SF
  • Ingredients: Butternut Squash OL,  onion, garlic, celery, carrot O, coffee beans, vegetable stock  (onions, white-only leeks, carrots, celery, mushrooms, parsnips, fennel, parsley, tomatoes, garlic and fresh bay leaves), sage, cinnamon, maple syrup, olive oil, s&p.
  • To serve: Heat gently on the stove until heated through.
  • Enjoy within 5 days.
