Chicken thigh pieces are cooked in a delicious blend of tomatoes, herbs, cauliflower, and kalamata olives. Top with feta cheese if you'd like, or serve as is. One serving is a hearty meal for one. This dish can also be made into a meal for two by serving with rice.

  • Ingredients: Smart Chicken thighs, cauliflower O, tomatoes, kalamata olives, red onion O, garlic, red wine vinegar, cinnamon, thyme, parsley O, s&p. 
  • To serve: Warm gently on the stove until heated through. Top with feta cheese, if desired.
