This fresh, summery salad makes a lovely dinner or can easily be split into a few side salads. It is full of organic strawberries and cucumber ribbons. The dressing, made with freshly squeezed lime juice, pureed strawberries and olive oil is a real favorite!
- 1 quart salad; 1/3 cup dressing
- GF, DF, SF
- Ingredients: Mixed greens OL, strawberries O, red onion O and cilantro OL.
- Dressing ingredients: Strawberries O, apple cider vinegar, lime juice, honey L, poppy seeds, red onion, extra virgin olive oil O, s&p
- To serve: Place greens and berries into serving dish, add dressing and enjoy. Add goat cheese and/or avocado if desired.
- Enjoy within 5 days.
