Green Salad with Honey-Roasted Rhubarb, Fennel, Mint & Pine Nuts w/Lemon-Honey Dressing
This Green salad is a large meal on its own or can be split into 2-4 side salads. Rhubarb is roasted in honey, and is topped with thinly sliced fennel, fresh mint and locally grown lettuce. The delicious dressing is made with fresh-squeezed lemon juice, extra virgin olive oil and honey from the roasted rhubarb.

Salad Ingredients: Green Lettuce OL, rhubarb O, fennel O, Cook's honey L, fresh mint O & pine nuts.
Dressing Ingredients: Extra virgin olive oil O, fresh squeezed lemon juice, apple cider vinegar, honey from roasted rhubarb, s&p.
To serve: Place greens and veggies onto serving dish, add pine nuts and dressing.
