Lemony Sunchoke Soup

This bright, lemony soup feels hearty and down to earth with the added texture of fava beans and flavor of sumac. It is served over roasted sunchokes (Jerusalem artichokes), a root vegetable with an artichoke-like flavor.  1 pint serves 1-2.
  • 1 pint soup with roasted sunchokes packaged separately.
  • GF, DF, SF
  • Ingredients: Sunchokes, fava beans, lemon juice, vegetable stock (onions, white-only leeks, carrots, celery, mushrooms, parsnips, fennel, parsley, tomatoes, garlic and fresh bay leaves), coconut oil, shallot, garlic, ground sumac, cilantro, s&p.
  • To serve: Heat soup gently on the stove until heated through. Warm sunchokes in the oven at 350 about 10 minutes. 
  • Enjoy within 5 days.
  • Packaged in glass.
