    Eggplant, Tomato & Chickpea Casserole

    This flavorful, late summer summer dish is full of Montana grown veggies and Middle Eastern flavors. First we slice and roast eggplant, then we cook fresh heirloom tomatoes into a thick sauce, and last, we layer the two along with some MT timeless chickpeas. This dish can be served with fresh bread or a grain.

    • Ingredients: Eggplant OL, tomatoes OL, Timeless Foods chickpeas OL, onion O, garlic, extra virgin olive oil O, basil OL, parsley OL, tomato paste, cinnamon, sugar, s&p.
    • To serve: Warm in the oven until heated through. Compostable container is oven safe to 450.
