This flavorful summer dish is full of Montana grown veggies and Middle Eastern flavors. First we slice and roast eggplant, then we cook fresh tomatoes into a thick sauce and last we layer the two and bake to perfection. This dish can be served with fresh bread or a grain.
  •  1 serving is a large portion for 1 person; packaged in a compostable container.

  • Ingredients: Eggplant, tomatoes OL, Timeless Foods chickpeas OL, onion O, garlic, extra virgin olive oil O, basil OL, parsley OL, cinnamon, sugar, s&p.
  • To serve: Warm in the oven until heated through. Compostable container is oven safe to 450.
  • Enjoy within 5 days.
