    Moroccan Roasted Veggies w/Homemade Harissa

    This flavorful dish is made completely of veggies, herbs and spices. We slather chopped vegetables in our homemade veggie stock and Harissa paste, roast, and top with fresh herbs like parsley and mint. This dish can be served on its own, with couscous, rice or chickpeas, or with your favorite hot bread.

    • 1 pint, 1 quart; packaged in glass.

    • Ingredients: Carrots OL, zucchini OL, sweet potatoes O,  tomatoes OL, eggplant O, cauliflower, yellow onion, olive oil, garlic, ginger, ras el hanout, turmeric, mint O, parsley O, harissa paste (dried chilies, cumin, coriander, caraway, garlic, smoked paprika, lemon juice, vinegar, tomato paste, olive oil O), veggie stock (onions, carrots, celery, mushrooms, parsnips, parsley, basil, thyme, garlic, olive oil, apple cider vinegar),  s&p.
    • To serve: Warm on the stove until heated through. Serve on its own or with rice, another grain, bread, tortillas, or even with a fried egg!
    • Enjoy within 5 days.
