This parsnip and sweet potato mash makes for a great side dish for the meatloaf this week. It is also wonderful on its own. 1 cup serves 1.
  • 1 cup, pint, quart
  • GF, DF, SF, W30
  • Ingredients: Parsnips O, sweet potatoes O, extra virgin olive oil O, beef stock (roasted beef bones, onions, carrots, celery, tomatoes, fresh parsley and bay leaves), chives, s&p.
  • To serve: Warm gently on the stove until heated through.
  • Enjoy within 5 days.
