These gluten-free cookies are soft, chewy and delicious. Filled with ginger spice and gooey pockets of melted chocolate, this is a treat the whole family will enjoy! Preheat oven to 350. Line sheetpan with parchment. Scoop out about 2 Tbs of cookie dough, roll into a ball, roll in sugar and place on sheetpan. Bake for 9-12 minutes, depending on cookie size and oven, rotating halfway through. Cookies should be puffed and cracked, and dough between the cracks looks underbaked.
