    Creamy Coconut Wild Rice Soup with Roasted Sweet Potato

    This hearty, comforting soup is made with a base of coconut milk, is full of wild rice and has sweet and spicy turmeric and red curry flavors.  It includes cubed, roasted sweet potatoes and a lime for serving. One quart serves 2-4.
    • Size: 1 quart
    • 1 qt soup includes a lime for serving

    • Ingredients: Lundberg wild rice blend, sweet potato O, coconut milk, Mae Ploy Red Curry Paste (Dried red chili, garlic, lemongrass, salt, shallot, galangal, kaffir lime peel, pepper), coconut oil, garlic, shallot, onion O, turmeric, sugar O, coconut aminos O, lime, olive oil, s&p.
    • To serve: Heat soup gently on the stove until heated through. Serve with a squeeze of lime.
    • Keep refrigerated and enjoy within 5 days.
