Green Salad with Roasted Beets, Pea Shoots and Grapefruit Dressing
This fresh salad is made with mixed baby greens, beets and locally grown microgreens. A quart salad makes one large meal or can be easily split into 2-4 side salads. Dressing is made with fresh-squeezed grapefruit juice.

1 qt salad includes 1/4 cup sunflower shoots, 2 tablespoons almonds and 1/3 cup dressing

Dressing Ingredients: Grapefruit juice, extra virgin olive oil O, honey L, apple cider vinegar O, s&p.
To serve: Place greens and veggies onto serving dish, add almonds and dressing, and enjoy!
