This hearty Mediterranean inspired kale and oat groat salad is a meal on its own (quart) or can be served as a side. Organic chopped kale is added to cooked, plump oat groats and wilts slightly before being dressed with olive oil and fresh-squeezed lemon juice. The salad is mixed with sumac-roasted sweet potato, pickled red onion, fresh mint and toasted pumpkin seeds.
