This hearty mediterranean inspired kale and oat groat salad is a meal on its own or can be split into 3-4 smaller salads. Massaged Kale is added to cooked, plump oat groats and wilts slightly before being dressed with olive oil and fresh-squeezed lemon juice. The salad is topped with sumac-roasted sweet potato, pickled red onion, fresh mint and pumpkin seeds.

  • 1 quart salad includes 2 Tbs pumpkin seeds; packaged in glass.

  • Salad Ingredients: Kale O, sweet potatoes O, GF Prairie oat groats L, sumac, red onion O, red wine vinegar, honey L, pumpkin seeds, lemon juice, extra virgin olive oil O, mint, s&p.
  • To serve: Place kale and veggies onto serving dish and top with pumpkin seeds. Add feta cheese if desired.
  • Enjoy within 5 days.
