Kale Salad w/ Poppy Seed-Crusted Delicata Squash & Pomegranate
For this salad we roast sweet delicata squash in coconut oil with poppy seeds and garlic. Local, organic kale is chopped then "massaged" with fresh-squeezed lemon juice and salt. It all comes together with juicy pomegranate seeds and a simple, flavorful dressing. We pack jars with around 5oz greens per quart, so this salad is a large meal or can be used for several side salads.
