    Roasted Tomato Artichoke Soup

    Roasted tomatoes and marinated artichoke hearts are simmered then blended for this simple yet flavorful soup. Enjoy on its own, with a grilled cheese sandwich or a green salad. 1 quart of soup serves 2-4.

    • Ingredients: Roasted tomatoes, marinated artichokes (artichokes, canola oil, vinegar, drained) onion O, garlic, veggie stock  (onions O, carrots O, celery O, mushrooms O, parsnips O, parsley O, basil O, thyme O, garlic, olive oil, apple cider vinegar O, s&p), s&p.
    • To serve: Warm gently on the stove until heated through.
    • Enjoy within 5 days.
