This hearty coconut curry is full of organic cauliflower, MT-grown chickpeas and lots of flavor. It can be served on its own or with rice or another favorite grain. This curry is thick and filling, not soupy with broth. 1 quart is suitable for 2 servings.

  • Ingredients: Cauliflower O, Timeless Foods Chickpeas OL, shallot, garlic, ginger, serrano pepper, Mae Ploy Yellow Curry Paste (garlic, lemongrass, shallot, dried red chile, salt, galanga, cumin, cinnamon, star anise, turmeric, kaffir lime peel, coriander seed), coconut milk O, turmeric, sugar, coconut aminos, coconut oil, s&p.
  • To serve: Warm curry gently on the stove. Serve with rice. Top w/your choice of greens, herbs, sesame seeds and/or avocado.
