    Red Lentil, Chickpea & Apricot Stew

    This flavorful, hearty veggie soup is made with Montana grown organic Petite Crimson lentils and garbanzo beans. The soup is partially blended, therefore it is creamy and smooth with the occasional whole chickpea or sweet, plump apricot. One quart of soup serves 2-4.

    • Ingredients: Timeless Foods Red lentils OL, Timless Foods Chickpeas OL, dried apricots, tomatoes, onion O, garlic, veggie stock  (onions O, carrots O, celery O, mushrooms O, parsnips O, parsley O, basil O, thyme O, garlic, olive oil, apple cider vinegar O, s&p) cumin, thyme, parsley O, s&p.
    • To serve: Heat gently on the stove until heated through.
    • Enjoy within 5 days.
