    Burmese Coconut Chicken w/Sweet Potatoes, Ginger & Cilantro


    This chicken dish is hearty, flavorful, and sure to please the whole family. Chicken thighs are cut into pieces, marinated with ginger, turmeric, and coriander and browned. Coconut milk, sweet potato, chilies, fish sauce and lime really bring the dish over the top.  This tasty Burmese-inspired dish is great on its own or served with rice.

    1 pint includes approx. 6 oz of chicken and a lime for serving, a suitable meal for 1.

    Ingredients: Smart chicken, sweet potatoes O, garlic, ginger O, shallot, chilies, cilantro O, Red Boat Fish Sauce (anchovy, sea salt), Thai Kitchen coconut milk (coconut milk, water, guar gum), fresh-squeezed lime juice, veggie stock  (onions O, carrots O, celery O, mushrooms O, parsnips O, parsley O, basil O, thyme, garlic, olive oil, apple cider vinegar, s&p), olive oil, coconut oil O, coriander, turmeric, s&p.
