    Burmese Coconut Chicken w/Sweet Potatoes


    This chicken dish is hearty, flavorful, and sure to please the whole family. Chicken thighs are cut into pieces and marinated with ginger, turmeric, and coriander. It is browned then finishes cooking with sweet potato, chilies, fish sauce, lime and more.  This tasty Burmese-inspired dish is great on its own or served with rice.

    • Ingredients: Smart chicken, sweet potatoes O, garlic, ginger O, shallot, chilies, cilantro OL, Red Boat Fish Sauce (anchovy, sea salt), Thai Kitchen coconut milk (coconut milk, water, guar gum), fresh-squeezed lime juice, veggie stock  (onions O, carrots O, celery O, mushrooms O, parsnips O, parsley O, basil O, thyme, garlic, olive oil, apple cider vinegar, s&p), olive oil, coconut oil O, coriander, turmeric, s&p.
    • To serve: Warm gently on the stove. Serve w/rice or enjoy on its own.
