    Chicken Vindaloo w/Sweet Potatoes & Green Beans


    This delicious Indian dish is made by marinating boneless, skinless chicken thighs in a mix of ginger, garlic and a variety of spices overnight. The chicken is then cooked with onion, sweet potatoes and green beans, ending with a stew-like consistency.
