    Chicken & Veggie Vindaloo


    This delicious Indian dish is made by marinating boneless, skinless chicken thighs in a mix of ginger, garlic and a variety of spices overnight. The chicken is then cooked with onion and sweet potatoes, ending with a stew-like consistency.

    • Ingredients: Smart Chicken thighs, sweet potatoes O, green beans O, coconut oil, onion O, garlic, ginger, serrano pepper, apple cider vinegar O, veggie stock (onions O, carrots O, celery O, mushrooms O, parsnips O, parsley O, basil O, thyme, garlic, olive oil, apple cider vinegar, s&p), mustard seeds, cumin, coriander, turmeric, fenugreek, cinnamon, cloves, paprika, s&p. 
    • To serve: Warm vindaloo gently on the stove. Serve with rice, if desired. 
    • Enjoy within 5 days.
