    Curried Egg Salad

    This egg salad makes an excellent lunch on its own or as a sandwich. Homemade olive oil mayo, fresh veggies and herbs make this salad as healthy as it is satisfying. One cup serves one on its own and two if used in a sandwich, salad or wrap. 
    • Size options: 1 cup, 1 pint, 1 quart

    • Ingredients: Eggs L, celery O, red cabbage O, mayonnaise (eggs, mustard, lemon, vinegar, olive oil), lemon juice, curry powder, cilantro O, green onion O, s&p.
    • To serve: Enjoy this egg salad by itself, on a bed of greens, wrapped in lettuce or cabbage leaf, or on your favorite sandwich bread or wrap.
    • Enjoy within 5 days.
