    Frozen - Red Lentil, Chickpea & Apricot Stew

    This flavorful, hearty veggie soup is made with Montana grown organic Petite Crimson lentils and garbanzo beans. The soup is partially blended, therefore it is creamy and smooth with the occasional whole chickpea or sweet, plump apricot. One quart of soup serves 2-4.

    Ingredients: Timeless Foods Red lentils OL, Timless Foods Chickpeas OL, dried apricots, tomatoes, onion O, garlic, veggie stock  (onions O, carrots O, celery O, mushrooms O, parsnips O, parsley O, basil O, thyme O, garlic, olive oil, apple cider vinegar O, s&p) cumin, thyme, parsley O, s&p.

    Preparation

    To serve: Thaw in fridge. Heat gently on the stove until heated through.

    Once thawed, enjoy within 5 days.

    Serving Suggestions

    Garnish with fresh herbs like cilantro, mint, or parsley, a squeeze of lemon or lime.

    Top with Yogurt ( dairy or non-dairy) or avocado to add creaminess and chopped nuts and seeds for a little crunch!

    Serve with crusty bread, or over a bed of rice, couscous, or quinoa.

    Add your favorite hot sauce for a bit of heat.
