    This flavorful, coconut-based dish is full of chicken, vegetables and fresh herbs. Roasted, cubed sweet potatoes, thinly sliced zucchini and spinach give the dish a variety of flavor and texture. Zucchini, spinach and herbs are served raw to avoid cooking twice, giving you the freshest dish possible. One serving serves 1-2.

    • 1 serving includes 1 pint of chicken coconut soup and 1 pint of raw zucchini, spinach and herbs; approximately 6oz chicken breast

    • Ingredients: Whole chicken, sweet potato O, zucchini OL, spinach OL, coconut milk O, ginger, garlic, onion O, cilantro, mint O, red pepper flakes, veggies stock (onions, carrots, celery, mushrooms, parsnips, parsley, basil, thyme, garlic, olive oil, apple cider vinegar, s&p)
    • To serve: Warm soup gently on stove. Add zucchini and spinach last and warm until just cooked through.
    • Enjoy within 5 days.
