Thai Cabbage and Veggie Salad w/Cashews, Toasted Coconut and Lime & Herb Dressing
This is a delicious, veggie and herb-filled salad to be enjoyed on its own or paired with this week's Grill-at-Home Thai-marinated Pork Tenderloin. The salad is topped with toasted cashews, toasted coconut, and a zesty, flavorful Thai dressing. One salad, topped with 8oz of pork tenderloin is a nice meal for two. You could order more or less pork depending on how meat-heavy you'd like it to be, or just enjoy the salad on its own.

Salad Ingredients: Napa cabbage O, cucumber OL, bell pepper O, cilantro OL, mint OL, basil OL, green onion OL, cashews and coconut flakes.
Dressing Ingredients: Fresh-squeezed lime juice, lime zest, ginger O, jalapeno, shallot, coconut aminos O, Red Boat Fish Sauce (anchovy, sea salt), olive oil, cilantro OL, brown sugar O, garlic, s&p.
To serve: Place greens and veggies onto serving dish, add almonds and dressing, and enjoy.
