- Ingredients: Sweet potatoes O, carrots OL, kale OL, summer squash OL, bell peppers O, broccoli, snap peas O, mushrooms O, onion O, coconut milk, vegetable stock (onions, carrots, celery, mushrooms, parsnips, parsley, basil, thyme, garlic, olive oil, apple cider vinegar, s&p), Mae Ploy Red Curry Paste (dried red chili, garlic, lemongrass, salt, shallot, galangal, shrimp paste, kaffir lime peel, pepper), garlic, brown sugar, fish sauce, lime juice, coconut oil, s&p.
- To serve: Warm soup, serve with rice and top with cilantro and lime, if desired.
