    Quinoa & Lentil Stuffed Acorn Squash

    This vegetarian stuffed squash is as beautiful as it is flavorful. Locally grown squash is roasted before being stuffed with a colorful and tasty veggie mix. One serving includes two acorn squash halves, a great meal for two. 

    • 1 serving includes 1 stuffed acorn squash; packaged in an oven-safe compostable container.
    • GF, DF, SF
    • Ingredients: Acorn squash OL, quinoa, Timeless Foods red lentils OL, dried cranberries, pumpkin seeds, garlic, extra virgin olive oil O, lemon juice, green onion, parsley, s&p.
    • To serve: Preheat oven to 350. Place squash, stuffing side up, on roasting pan with a little oil or water. Top with feta, goat cheese and/or parmesan cheese before baking, if desired. You can also warm directly in compostable container (oven safe to 450F).
    • Enjoy within 5 days.
