This vegan stuffed squash is as beautiful as it is flavorful. Locally grown squash is roasted before being stuffed with a colorful and tasty veggie mix.
Size: 1 serving includes 2 acorn squash halves.
2 squash halves are a suitable meal for 1-2, depending on sides served.
Packaged in a compostable container (oven safe to 450F).
Ingredients: Acorn squash OL, quinoa O, Timeless Foods red lentils OL, dried cranberries (cranberries, sugar), pumpkin seeds, garlic, extra virgin olive oil O, fresh-squeezed lemon juice, green onion O, parsley O, s&p.

To serve: Preheat oven to 350F. Remove lid. Top squash with feta cheese, goat cheese and/or parmesan cheese before baking, if desired. Bake in oven for about 20 minutes, until squash is warmed through.
